Broccoli and Buckwheat Soup
If you need a nourishing, tasty, gut-healing soup this is your answer! My Naturopath has advised me that the state of my gut needs a whole lot of love. That love can can be in the form of broth. Broth has lots of healing properties including glutamate which can reseal the gut lining and adding it into a soup meals it isn't as strong in flavour.
ow I always favour vegan and plant based foods but when your health starts to suffer and you don't feel 100% then you need to be able to listen to your body. This is what my body was screaming at me for! You can leave out the broth in this recipe and instead use some vegan veggie stock. Still a tasty alternative just not as gut-healing :)
2 heads of broccoli, roughly chopped
2 medium onions, roughly chopped
1 zucchini, peeled and chopped
2 cups of homemade bone broth
1 tsp of veggie stock powder
1 cup uncooked buckwheat groats
1 tbs olive oil
Salt and pepper
Fresh parsley to garnish
1. Boil a big jug of water, cover the buckwheat in a pot and then cook for 15 minutes or until soft.
2. In a seperate pot heat the olive oil and sauté the onions. Add zucchini and cover with broth, stock and 4 cups of water.
3. Cook for 10 minutes and then add the broccoli. Cook for a further 10 minutes or until broccoli is soft. Then switch off the heat and whizz up until smooth.
4. Drain the buckwheat from the pot and then add to the broccoli soup mix.
5. ENJOY!!! xx
