Magical Porridge


Oh these chilly mornings are hitting me hard! Now I know my last recipe was a porridge but this one was just too darn pretty not to share!


Serves 2


1 cup quick oats

1 cup mixed frozen berries

4 dates (medjool are great or standard dried dates without pips)

2 cups water

1 tablespoon maple syrup

1 teaspoon cinnamon

1/2 cup plant based milk (I used Bonsoy)

1 banana

handful of walnuts or nut of choice



In one small pot place the frozen berries, 1/2 cup water, dates and maple syrup and heat on the stove top for 10 minutes. I usually start this 5 minutes before the oats themselves whilst I prep the pretty toppings!

In another pot place the oats, 1.5 cups of water and cinnamon. Bring to the boil then reduce to a simmer whilst stirring. I like my oats when they aren't too runny so I usually cook them for around 5 minutes. Add more liquid if you need - it's all about finding your perfect consistency!

Divide the oats between 2 bowls then pour the berry mix evenly on top. Pour in a dash of the plant based milk (gives it that lovely swirly colour), top with chopped banana and nuts and hey presto! Done and ready for your belly :)
