Vegan Chocolate Mousse

Now this little baby is something that I am BEYOND excited to have created! Ahhh it's heaven to my tastebuds and my stomach!

Lately I have had so many digestion issues that it means I have had to rely mainly on smoothies, juices and foods that are easy to absorb into my body. Cue this chocolate mousse. It's creamy, healthy and extremely satisfying due to the nutrient dense ingredients. Sometimes I have it for breakfast, sometimes for lunch, sometimes for any snack during the day :)

This recipe serves one but you can times by as many people as you are feeding and make it as big as the picture above! It's a fabulous party dessert that is sneaky healthy... you just might not want to share it with anyone... 

Ingredients: 
1 frozen banana (freeze in smaller chunks)
1/2 ripe hass avocado
pitted dates
1 teaspoon raw cacao
1 teaspoon chia seeds
1/2 teaspoon maca powder
1 teaspoon good quality maple syrup (optional) 
teaspoon The Healthy Chef vanilla pea protein powder 
1/4 cup Pure Essence coconut water

Method:
Whiz all ingredients into a mousse in a high speed blender... and that's about it!  
Add more coconut water if it gets stuck in the blender and top with some cacao nibs, coconut, cranberries or anything else that floats your boat. 

Enjoy this guilt free mousse knowing your are getting lots of nourishing good fats, slow release energy from the bananas and maca powder, happy hormone dopamine and heaps of antioxidants from the cacao. Happy eating!
